Yeast extract enzyme hydrolyze the yeast on the three steps as follow, and the final flavor component contain nucleic acid, amino acid, polypeptides and trace component.

2.hydrolyzing protein and nuclease
3.Conversion of AMP(adenylic acid) to IMP(inosinic acid)
